Reviewing restaurants is a tricky business, and it raises many issues. One of the questions we are constantly asked is why we don’t ever give a really bad review. Well, we endeavour not to review bad restaurants! They are either recommended or we have eaten there ourselves plus we want to promote and help the restaurant not damage its reputation. Actually it is what we don’t say that speaks volumes and our more insightful readers detect this.

STOCKS

The basis for all good soups and a lot of other stews or casserole dishes is a good fresh stock. They are usually made from the bones and flesh of fish, meat and poultry, with added vegetables. Whatever stock you have should be in harmony with the ingredients in your end dish.
