Chef Adrian O’Herlihy of the Dusit Thani Pattaya has a menu of Dover sole dishes at the Cascade restaurant all this month, including fillets of Dover sole with chardonnay sauce at 2,300 baht, poached fillets of Dover sole with a fricassee of New Zealand mussels at 2,400 baht, and turbans of Dover sole with Savoy cabbage and a lightly spiced Thai seafood mousse, at 2,450 baht.
