Throughout April, Chef Adrian W. O’Herlihy at the Dusit Thani’s Bay Italian Restaurant is presenting the sublime flavours of Sicily and the Mediterranean in dishes that deliciously highlight the tuna. Light options such as tartare and the Mediterranean tuna salad exhibit a taste of the cuisine of Sicily.




The utilization of traditional items such as couscous, olives, sun-dried tomatoes, white beans and lentils, to name a few, are evident throughout the culinary fare on offer such as Tagliata di Tonno con Dragoncello, Olive Nere, Brodo di Pomodoro e Couscous (Pan-seared tuna steak with tarragon, tomato, black olives, tomato broth & couscous, THB 570), Tonno Saltato con Cavolo Stufato, Patate Croccanti e Vinaigrette di Capperi e Cipolla (Sautéed tuna with braised cabbage, crisp potato and caper-scallion vinaigrette, THB 550) and many more.

Meanwhile their Peak Chinese Restaurant is featuring the splendid maritime morsel – abalone, the Pearl of the Ocean Abalone is essentially a large sea snail and is classified as a mollusk. The flesh of the abalone is revered and is considered a delicacy in South East Asia. It is especially popular on menus for special occasions such as weddings. The shell of the abalone is also highly prized and can be found on jewellery and decorations. Abalone is primarily found in the cold waters of the world, particularly in the Southern Hemisphere. In April, relish its taste in dishes such as Stuffed Abalone with Minced Prawns flavoured with Black Peppercorn Sauce (THB800), Braised Abalone with Bamboo Pith and Pork Tendon (THB750) and many more.

At the Cascade Restaurant Chef Adrian is presenting a collection of dishes portraying the fish and seafood of the pristine Atlantic coastline of Brittany and Normandy in Northwest France. Some of the dishes incorporate the use of apples, particularly the inclusion of cider which is part of Normandy’s tradition. Oysters are also predominant in some of the creations, oysters being an indispensable part of the cuisine of Normandy and Brittany.

Menu includes Soft-cured River Trout with smoked paprika sour cream, radish-fennel salad, cider dressing at THB 380, Half Dozen ‘Fin de Clair’ Oysters from Brittany with Calvados-apple granite at THB 900 and other seafood creations!
