Couscous With Tuna/Chicken/Pork



This particular recipe is with Tuna but you can cook it with any of the above.

Ingredients for four people

125gm couscous

200ml water

1/4 red pepper

1/4 yellow pepper

1/4 green pepper

1tspn lemon juice

large bunch of mint

4 spring onions

6-8 mangetout or sugar snap peas

1 stick celery

1 small cucumber

2 large garlic cloves

4 fresh tomatoes or 1tin of tomatoes

virgin olive oil

1 tspn salt

Method

Finely chop all the vegetables, crush and chop the garlic and put to one side

Put the water into a large saucepan along with 2 tblspn olive oil and the salt and bring to the boil. Remove from the heat.

Stir in the couscous and allow to swell for 2 min.

Add 2-3 tblspn olive oil and heat again on a low heat for 3 min while stirring with a fork to separate the grains of couscous.

As soon as it separates, tip in all the ready prepared vegetables and stir thoroughly. Serve hot or cold

Tuna can be grilled with a sprinkle of tarragon on it.

Chicken breast is great with a little olive oil and tarragon and microwaved in a covered dish. Pour the juices over the couscous,

Pork fillet with a little cinnamon and basil goes great with the couscous.

Where to buy

Couscous from Friendship but other stores have it.

Vegetables all came from my favourite market but you can get them in all the supermarkets.

Lemon juice and virgin olive oil from Best,but other stores do have them.
